Mediterranean Penne Pasta

A great pasta served hot or cold - perfect for meal prep!

Servings: 2

Ingredients:

  • Brown rice penne pasta
  • 3-4 tbsp of olive oil
  • Squeeze of half of a lemon
  • 1/4 cup of shredded basil
  • 1 cup of chopped cherry tomatoes
  • 1/4 cup of chopped pine nuts
  • 1 handful of pea shoots
  • 1 pack of Brami Garlic and Rosemary beans
  • Salt and pepper to taste

 

Instructions:

  1. Boil water and don’t forget to add a few dashes of salt to the water. This will actually improve the flavor of the pasta and it also helps the water boil (slightly) faster. Cook pasta according to package directions.
  2. Remove pasta from the water and place in a large mixing bowl. Drizzle on olive oil and a squeeze of lemon juice.
  3. Add basil, tomatoes, pine nuts, pea shoots, and Brami lupini beans. Mix well!
  4. Season with salt and pepper to taste.
