Lupini Bean Garlic Soup


Flavorful, garlicky, and protein-packed - this is a hearty favorite year-round.

Ingredients:

  • 1 bag of Brami Garlic & Rosemary Lupini Beans
  • 1 1/2 cups vegetable broth
  • 1 medium-large onion
  • 6 cloves of garlic
  • 1/2 cup cauliflower
  • 2 tbsp olive oil
  • 2 tsp fresh lemon (or lime) juice (about a 1/2 lemon)
  • Oregano, curry powder, salt, black pepper, and cayenne pepper to taste

 

Instructions:

  1. Wash and chop the onions, garlic, and cauliflower.
  2. Saute the onions in olive oil in a spaghetti-sized pot for 1-2 minutes.
  3. Add the garlic and saute 1 minute.
  4. Add the cauliflower with a pinch of salt and saute 3 minutes.
  5. Add the broth and simmer 5 minutes.
  6. Add oregano, curry powder, salt, black pepper, and cayenne pepper to taste.
  7. Turn off heat and add the citrus.
