Fresh Fig and Fennel Salad

Packed with nutrients this unsuspecting salad is a heart-healthy choice. Figs and fennel are known for their vitamin and mineral content that impact bone health - including potassium and calcium. While Brami lupini beans provide protein and fiber - necessary components to maintaining good gut health.

Don’t be tricked by the bright summer flavors, this tasty salad is actively working to nourish your body and give you the nutrients you need.

Servings: 2

Ingredients:

  • 2 cups of fresh arugula
  • 1/2 cup Brami lupini beans
  • 1/3 cup of pitted green olives
  • 6 figs sliced in half
  • 3 large fennel bulbs, thinly sliced
  • 2 tbsp of fresh dill
  • 1/4 cup of chopped pistachios
  • 1/3 cup of olive oil
  • 1 clove of garlic grated
  • 1 tbsp of Dijon mustard
  • Squeeze of lemon
  • Salt + pepper to taste

 

Instructions:

  1. Add arugula to a mixing bowl. Top with Brami beans, olives, fennel, figs, dill, and pistachios.
  2. In a small bowl, add olive oil, garlic, dijon mustard, and lemon juice. Mix with a whisk or fork until blended. Add salt and pepper to taste.
  3. Drizzle dressing onto the salad and mix together.
