BRAMI Onion Curry Soup

Ingredients:

  • 150g BRAMI Garlic & Rosemary Lupini Beans
  • 1 1/2 cups vegetable broth
  • 1 medium-large onion
  • 6 cloves of garlic
  • 1/2 cup cauliflower
  • 2 tbsp olive oil
  • 2 tsp fresh lemon (or lime) juice (about a 1/2 lemon)
  • Oregano, curry powder, salt, black pepper, and cayenne pepper to taste

Instructions:

  • Wash and chop the onions, garlic, and cauliflower.
  • Saute the onions in olive oil in a spaghetti-sized pot for 1-2 minutes.
  • Add the garlic and saute 1 minute.
  • Add the cauliflower with a pinch of salt and saute 3 minutes.
  • Add the broth and simmer 5 minutes.
  • Add oregano, curry powder, salt, black pepper, and cayenne pepper to taste.
  • Turn off heat and add the citrus.
  • Enjoy!
